Food-borne diseases pose a great risk to human health and life. These are diseases that affect the gastrointestinal tract as a result of infections caused by several types of pathogens, such as viruses, parasites, and bacteria. Flynn (2018), writing for Food Safety News, summarized the top ten food safety stories of 2018 relating to food-borne illnesses. This article clearly shows that food-borne illnesses are a significant health issue in America and other first-world countries such as Canada and the UK.

There are several outbreaks that occurred in 2018, such as E.coli, salmonella, and listeriosis infections. From the article, the clear lesson is that most of the outbreaks that occur result from poor implementation of food safety standards, such as restaurants selling uncontaminated food or people eating poorly cooked meals. Nonetheless, from the articles, one infection that I think poses the greatest risk is E.coli. The recent outbreak of this bacterial infection resulted from the presence of the pathogen in romaine lettuce. This is a vegetable that is mainly eaten raw. Most food-borne pathogens can be killed by properly cooking food. However, when these pathogens are present in raw food, it becomes hard to control their spread (Kirezieva et al., 2015). Listeriosis and E.coli can be controlled by properly cooking and handling food, but E.coli, which is present in foods that should not be cooked, is harder to control.

Extra measures need to be taken to prevent infection from raw foods. For instance, foods like romaine lettuce should be washed properly and thoroughly before eating. Since such foods are not to be cooked to kill the pathogens, they must be properly washed to ensure that the pathogens are off them completely before they are ready for consumption.
